These Ezekiel bread toasts are all the craze lately, for a good reason. Way too many people have gluten and other food and chemical sensitivities. There are many variations of these bread too – Ancient Grain Bread, Sprouted Grain Bread, and Whole Grain Bread. With some good variations – Sesame, cinnamon raisin, 7-grains, 21- grains, muffins, and bagels. Anywho, go to the freezer section of your local supermarket and you will find one or many of these. Pick one up to try. It is good for you.

​What do you do with frozen Ezekiel bread?

I just thaw it while doing this or that in the kitchen and then toast with a tsp of butter on a hot pan for about half a minute on each side. Easy Peasy.

Usually I would top it with Avocado and Fried Eggs. Or Black Beans and Fried Eggs. But there are nearly infinite possibilities.

Would I like the Ezekiel Bread Toast?

​Exactly How Many Kinds of these bread do I not know about?

​I am sure there are many more. But I pick up a new one every time I see one in the Freezer section. Also, I always have bread in my freezer for this reason.

Why do I need this bread?

Well. You do not. But if you are addicted to bread, and absolutely can not give up (the chemicals they load up the) white bread with, you want to give this bread a try. It is made with mostly non-GMO and organic ingredients. It also uses high Glycemic Index grains, and hence good for diabetics. I personally definitely feel full longer, and I am sure it’s the extra fiber.

Compare the Ingredients and Nutrition label of this with a White or Whole wheat bread too. And you will know what I am talking about.

Besides – this lasts a long time in the freezer, so it is super convenient. You almost never have to buy breakfast as long as you have some Peanut Butter in fridge and Ezekiel bread in the freezer. I am not a PBJ fan so I have personally tried it, but I bet it will taste just as good. If you try, do let me know.

Curry Roasted Chickpeas – No one can eat just once.

​Revising this Curry Roasted Chickpeas Recipe today. Oh So Dr. Google can Find it when People Search for Recipes with Garbanzo Beans or Chickpeas.

I will have to tell you though, this is a delicious and addictive snack. And guilt-free because it is good for you. Easy to prepare and pack for a day out, or for a workday snack. This is my lazy recipe. People with lots of patience make the all fancy-schmancy-gourmet hummus. But if the chickpea tastes this good roasted, why bother with blender and all that.

​Ingredients:

​Directions:

  • Rinse the canned garbanzo beans and drain to get rid of the salty liquid its canned in. Rinse and drain it a few times.
  • ​Toss the rinsed Garbanzo beans and all other ingredients in a large mixing bowl and combine everything. Take a taste. I load mine up with extra cayenne pepper because I love hot and spicy foods!
  • ​Spread a thin layer of the chickpeas on a baking sheet lined with parchment paper. Would work without parchment paper too. Parchment paper makes cleanup a breeze.
  • ​Heat oven to 350 F and cook for about 30 minutes. Check at 20, 25 -minute marks to toss and rotate in order to get an even crunch on all sides.
  • If cooking in Airfryer reduce the cooking times by half. Just check at 10 minutes to flip and turn, and cook another five minutes or so. You will know its done when it’s all browned and crunchy.

Serve as a snack immediately. Pack for midday work snack. Or take these Curry Roasted Chickpeas Snacks for a hike to fuel up midway, without losing all of the calorie burning benefits of the hike!

Nutritional Value of Chickpeas

Chickpeas or Garbanzo beans are high in protein, fiber, folate, Iron and Phosphorus. They have low glycemic index and hence better for diabetics (as compared to other kinds of grains.). They are also beneficial for intestinal and gut health. Look at this study to learn more.

Schezwan Tofu – Cooked in Airfryer in 10 minutes

This Schezwan Tofu cooked in the Air fryer is the holy grail of quick and easy cooking. Took me 10 minutes to cook from start to end, 5 minutes to eat, and 0 minutes of guilt! And all day of pride and accomplishment for finally nailing down how to make Tofu look exactly like this!

Ingredients and Method to cook Schezwan Tofu

I used One Block of Extra-Firm Tofu. Drain all the water and Cut in 1.5” pieces. Mix in this Schezwan sauce and Salt and Pepper.

Notice: No corn flour, no Soy Sauce, none of the bells and whistles. Simple is Delicious.

Grease the Air Fryer Basket and Preheat at 390 F. Yes. Do not skip this step. You do not want the Tofu Cubes sticking on to the basket.

Put the Tofu cubes in air fryer basket for 8 minutes. More if you like yours more crispy. But mine was perfect at 8 minutes!

What do you eat your tofu with?

Typically I would make this with vegetables such as bell peppers, bok choy, onions and tomatoes. And I would almost always end up breaking the Tofu. Not today. This was an absolute perfection. So much so that I did not bother pairing this up with anything. I gobbled it all up as soon as it became cool enough to eat!

My best bet would be to pair this up with any of the bok choy recipes I have on here. Bok Choy and Red Cabbage.

Halthy Breakfast Ideas for Valentines Day

Ahh, the food! Thy Name is Love. Much Ado About Chocolates, Cakes, Pastries, and Sugar. I still do not get the point of Valentine’s Day or Any-Day. But if you are into this kind of hum-drum, Here is A Healthy Valentines Day Breakfast Spread for you and a loved one.

Well, actually with this breakfast, so easy You can live like every day is Valentine’s day.


Breakfast Smoothies

Smoothies are the easiest to prepare and so pretty to look at. Mixed Berry Frozen Bag from your grocery store, add in half a peeled lemon, mint, small piece of ginger, salt, pepper, some chia seeds, a pinch of cayenne pepper Blend, pour into the drink glasses, and Serve.

All you need for making a Smoothie is a Powerful Blender. If you are up for it, get a Vitamix or Blendtec. But I own an Old Oster like this one and it is still going strong. I have not find a reason yet to get another one.


Beautiful Chia Pudding Bowls

Soak Chia Seeds Overnight in a Bowl, Preferable use Almond or another nut milk. In the morning top with berries, nuts, granola, a sprinkle of Pumpkin Spice powder, cinnamon powder. Enjoy!

If you are looking for quantity, You need about 2 Tbsp Chia seed per person. On another note, do not forget to sprinkle Chia seeds on your Salads, if you are into eating Salad.


Whole Grain Avocado Toast

A Healthy Valentines Day Breakfast - Whole Grain Avocado Toast

Alright. You just cannot go wrong with this healthy breakfast option. Toast a Whole Grain Bread (or Ezekiel bread). Chop Ripe Avocados and Spread on the Toast. Sprinkle Sea Salt, Pepper and Cayenne Pepper. Serve with a side of Eggs.


While you are at it, do not forget to serve that amazing flavored water that I talked about in this post. Hydration Matters: Drink More Water.

To sum it up.

Here is a summary of your Healthy Valentines Day Breakfast. Prepare a beautiful Infused water from any of the options above. Either a Chia Seed Pudding or a Smoothie. And Whole Grain Toast topped with Avocado and Eggs. Easy. Peasy. Hearty. Squeezy.

Since the people on the internet like lists for everything, BuzzFeed style I thought of doing one myself. There may be many ways to manage Stress Eating, I am only going to talk about five of my topmost today. I am sure everyone has eaten a whole bag of chips, or tub of ice cream, or something equally dopamine-inducing but bad for you in the long run. Hey, I have too!

First things first, even before I begin my list. It is perfectly normal to be experiencing Stress in general. And especially in times like these, in the middle of a global pandemic and unusually long remote workdays. Supervising the kid’s virtual school stressing you out and the virtual school stressing out the kids, You trying to be the best employee, best boss and best Parent all in a day. Something has got to give. Lets make sure it is NOT your health.

5 Coping Mechanisms When All you want to do is to eat your way out of stress.

1. Low Information Diet.

This is probably the only “Dieting” allowed in my DeskJobWeightLoss System. If too much information, news, social media gives you anxiety and friends, strangers, and family members all have their viewpoints that may send you into catastrophizing everything, a Digital Konmari might be just what you need. You want news, go to trusted news sources instead of learning your news from Social Media. Personally, I get a lot of my news from Comedians. Trevor Noah, Stephen Colbert, Conan O Brien are still my favorites. News with a good dose of laughter and much exaggeration of the quirks of human nature.

Checking on the news from a trusted source (not social media, not public comments, just the facts) once a day is enough.

You will never know until you try. There is nothing going on in the world that you need to know right now. In fact, turn off all your social media notifications and let people know if it is that important they will just have to find you on a call or text.

2. The Tomato Sauce Technique

Ok. Ok. Not the Tomato Sauce. I really meant the “Pomodoro” technique. I am sure you have heard of this. The Pomodoro Technique is a useful Productivity Tool. It involves breaking your tasks down into 25-minute chunks. You start your task at hand and also start your Pomodoro Timer for 25 minutes. At the end of 25 minutes take a small 5-minute break.

You could do many things in the short 5-minute break. Just do not check social media or the news. Go for a short walk. Take some deep breaths. Find a quiet corner and meditate. Drink some water.

There are so many uses for an inexpensive timer like this in a household. Kids could use it to Pomodoro their studies, chores and home work. And they will learn an important life skill too. Teach them the concept of taking a break.

Here is a perfect habit recipe for a Tomato-Timer break. After I turn off my Tomato Timer, I will take 3 deep breaths. And then Celebrate with a High-5!!

A lot of what I am talking about here is the proactive techniques for managing your day, even before the stress builds up to the point where you lose control of the situation.

3. Post it Your One thing. Yes. Just the ONE Thing.

This small habit is going to change your everyday life. Whether or not you are a List person (and I am definitely not one), whether you are an entrepreneur or work a 9-5 corporate job. Each morning when you start your workday, take a post-it note and write down the One thing you want to accomplish that day. Just the ONE thing.

Even if you had a To-Do list of 200 things, pull the one thing out for the post-it note. Celebrate when you remember to write the one thing on a post-it note. Check out this post about celebration.

Once you have accomplished the one thing, go ahead and do the next.

Multitasking is Overrated. How do I know? I used to take pride in that skill. I know better now.

It’s not the load that breaks you down, it’s the way you carry it.

How Stress affects anyone externally, may vary by the individual, but in general, living in perpetual Stress is harmful to all. Stress is the biggest contributor to poor quality of life. It ages your body, and heart and can lead to high blood pressure, high cholesterol, and high blood sugar. It also elevates your heart rate. Stress has also been shown to weaken the bones, make you sick! High levels of stress hormones, or cortisol, raise the body’s blood sugar, which can lead to insulin resistance, and also aggravate conditions like heartburn and inflammatory bowel syndrome. Besides constant uncontrolled stress eating could lead to Obesity. I could go on, and cite studies but I am sure you get the point. Let’s get back to the list.

4. Sleep Better. Make a Night Time Routine. Rise of the Bed Feeling Rested, not Tired.

Maintaining a regular sleep schedule and getting plenty of rest is important. Skip the mindless TV, social media and read a book instead to finish the day. Sleep Train yourself like you would teach a baby to sleep. Darken the room. Put calm music or white noise. Read Sapiens or Homo Deus. I am not kidding!! They are great books, but the first read is sleep-inducing I tell you.

I also talk about some foods and supplements that help you sleep here – Foods for A Good Nights Sleep. If you must stress eat, these may be the better choices of foods than the chips, cookies and icecream.

5. Get Moving Instead of Stress Eating

Walking is the worlds best medicine.

Hippocrates.

Yes. The dude who said – Let food be thy medicine, and medicine food. Also said that Walking is the best medicine. Add nature to it and I bet it will de-stress you. Chase waterfalls, rainbows, rivers, and mountains. They are everywhere, and so much better at calming your stress than watching TV for a whole entire weekend.

Personally I am not the one to go to gym and watch me lift weights on a wall mirror. So find some thing you will enjoy. But I know that I could go on a 20 mile walk and not even sweat it. And You do not need to spend hours walking to get the stress busting benefits of a walk.

Five minutes is better than none at all.

Hydration Matters: Drink More Water.

You’ve heard it a million times. Drink water. Then drink more water. Proper hydration is important for overall health, wellness, and weight management. It should really need no explanation, but I thought I would write some here.

Most of us don’t drink enough water. We are constantly dehydrated. If you are hungry, drink water first.

Why do I need to drink more water?

Your body is 60 percent water. Water helps your kidneys detox, your heart pumps blood and your intestines remove waste and absorb nutrients from the food you eat. Water helps to regulate your body’s internal temperature and prevents dehydration. It helps your brain functioning. Want more proof, read it straight from the research here.

Here are some more reasons.

  1. Water helps you lose weight easier.
  2. Water helps you feel full longer.
  3. Drinking more water increases your energy level.
  4. Water also helps get rid of toxins from your body.
  5. Helps flush out your kidneys and liver.

Need more reasons. Here is a theory I have.

A lot of times when you feel hungry, most likely you’re just thirsty. Drinking water before snacking will help curb your appetite or at least delay the snacking – helps you lose weight without dieting or exercising.

But Water is so bland and Tasteless.

Well. Look again. Does not look so bland and tasteless to me.

There are many ways you can get fancy and infuse water with delicious taste. Wash any fresh fruits and vegetables, perhaps some mint and lemons and add to the water. Leave in the refrigerator for an hour or so. And you will have the best tasting water.

Do I need an Electrolyte Supplement?

May be. If you are not eating a balanced diet, it might be a good idea to start with one. Electrolytes are minerals such as Calcium, Magnesium, Potassium, Phosphorus etc. They improve muscle function and also help absorb water in your body. Electrolytes are needed in small amounts, and you will realize they make you feel energetic and help you performing at your best during your work day. Try an Electrolyte supplement like this.

Guacamole Recipe

Easiest Guacamole Recipe You will ever make.

This is the easiest and possibly the most delicious Guacamole Recipe. You could make it even if you have never cooked before. You probably need some basic knife skills. This recipe is so forgiving, that you can pretty much use more or less of any ingredient you want without even knowing it.

Here are all the Ingredients and the method. 

In a large mixing bowl Add 2 Large Avocados chopped in 1'' pieces, 1 Tbsp. fresh minced Garlic, 1/2 cup finely chopped onion, 1 Cup tomato cut into bite sized pieces, 3 Jalapeno Peppers chopped finely (deseed them if you cannot eat hot and spicy food), 1 cup finely chopped fresh cilantro, Squeeze Juice of 1 Lime. Salt to taste (start with about 1/2 tsp), 1 tsp cumin powder, 1/2 tsp cayenne pepper. 
Mix well. Give it a taste to make sure you like it or if you need to add more spices or ingredients. 

What do you eat your Guacamole with?

Pair it will all kinds of Chips and Crackers. Top a whole grain or Ezekiel Bread Toast with Guacamole.  Or use it with a Bagel. Use on your Tacos, Burritos, Burrito Bowls, Salads. Use it to pretty much dip anything dip-able. Celery, Carrot, Cucumbers, Fries, Fish Sticks, Chicken Finger.

These Curry Roasted Chickpeas mixed in the Guacamole are quite literally to die for. Top it with a Tamarind sauce if you have some on hand. Yumm. Yumm. Yumm.

If you are a vegan this Lentil Recipe is for you. Lentils are probably the best source of Protein and Super Easy to cook. Easier if you have an Instant Pot or another kind of Pressure Cooker.

This Lentil Recipe uses lots of herbs and spices for taste and health benefits. This is what you will find in this corner of interwebs anyway!


Here are the choices of Lentils that are available easily in an Asian or Indian grocery store. And these days probably in most walmart, costco and Amazon and other organic markets as well. Here are some I cook quite frequently.

Split Pigeon Peas or Toor Daal

Yellow Mung Beans or Mung Daal – These are available with skin off or on. You can make the daal out of either.

Red Lentils


Ingredients and Cooking Method for Lentil:

For 4 Servings

Put all of the below ingredients into Instant Pot and cook for 20 minutes on High Pressure.

2 cups of lentils, 1 cup of chopped onion, 1 cup of chopped tomatoes, 3-4 fresh garlic cloves minced, about 1 Tbsp grated ginger, 1 tsp turmeric, 2-3 green chilly peppers, choice of vegetables such as zucchini, eggplant, cauliflower. cabbage – about 1 cup. Extra cayenne pepper or paprika if you are into eating spicy. 4-5 cups of water.

Check in about 40 minutes or so, Open the Pot. Add more water if desired, and heat on Saute mode for 5 minutes.

Tempering a lentil soup, in the end, makes a world of difference. Here are the ingredients for tempering. Use 1 tsp cumin, 1 tsp mustard, a pinch of asafoetida, and about 3 Tbsp of butter or ghee for tempering in the end

Take a small pan. and heat 3 Tbsp of ghee and add the rest of the ingredients for tempering. let cook for about 30 seconds, until brown, and add into the lentil soup and mix.

Garnish with Cilantro for extra deliciousness.

Eat like a soup, or serve over steamed rice if you are not counting the carbs. This all is a Lentil Lentil Recipe

You can take your scrambled eggs to a whole another level by adding some amazing weight loss spices such as paprika, turmeric, Asafoetida, green chilly peppers, and other vegetables!

Important: Do not worry about all of the “extra” ingredients for the curry flavor. Try to make it with whatever you have in your pantry and refrigerator. It is a super-forgiving recipe.

Ingredients:

[Serves 4]

  1. Eggs – 8 Large or 12 Medium
  2. Onion, chopped – 2 cup
  3. Bell Pepper chopped – 1 cup (use green/yellow pepper or any other sweet pepper you can find)
  4. Other choices of veggies from the approved vegetable list – 1/2 cup (I used a handful of fresh green peas and spring onions today)
  5. Tomato, chopped – 1 cup
  6. Cilantro or Coriander, chopped – 1/2 cup for garnish
  7. 2-3 Green chili, chopped long and thin (optional if you don’t like spicy, skip this)
  8. Tempering Spices | Pinch of Asafoetida, Cumin Seeds: 1 tsp, Mustard Seeds: 1/2 tsp, Nigella Seeds 1 tsp
  9. Salt – to taste
  10. Turmeric powder – 1 tsp
  11. Black pepper powder – 1/4 tsp
  12. Cayenne pepper or red pepper powder- 1 tsp (optional)
  13. Coriander powder – 1/2 tsp (optional)
  14. Olive Oil (or alternate Ghee or coconut Oil) – 1 tbs
Method:
  1. Break the eggs into a bowl and beat them with salt and black pepper and set them aside.
  2. Heat Olive oil over medium-high heat in your largest non-stick pan.
  3. Once the oil has warmed up, add the tempering spices, immediately followed by onion green peas, green chilies, and tomatoes (or other choices of veggies).
  4. Fry until onions are browned. Then, add salt, turmeric powder, cayenne pepper, and coriander powder.
  5. Mix well and add the eggs mixture and stir and cook for about 3-5 minutes while stirring and letting the egg cook through and scramble
  6. Add spring onion and cilantro, mix well, and turn off the heat.
  7. Serve immediately with a side of whole-grain bread, whole-grain tortilla, or use for lettuce wraps!
  8. Make extra to pack in your meal prep boxes for later.

Golden Pompano from Florida, I think that is what my local Asian market keeps. Or sometimes Larger ones from China. Stock up your freezer with Pompano because its the easiest fish to cook. This recipe of Golden Pompano is so easy that you are going to make it again and again.

I had 2 Pompanos, which were already cleaned and gutted by our fishmonger at the Grocery Store. Definitely make friends with the guy that sells the fish. Cooking fresh, cleaned fish makes your weekday evenings that much easier.

Wash the fish and drain it on a strainer to let it dry.

Marinade for Tandoori Pompano: Tandoori Masala and some fresh Lemon Juice.

Make some cuts on both sides of Pompano like in the picture above, and Apply about 2 Tbsp of Tandoori Masala and Juice of 1/2 Lemon Inside Out and leave it to marinate for about 10 minutes.


Marinade for Old Bay Pompano:

Old Bay Seasoning and some fresh Lemon Juice.

Make some cuts on both sides of Pompano and Apply about 2 Tbsp of Old Bay Seasoning and Juice of 1/2 Lemon Inside Out and leave it to marinate for about 10 minutes.

Air Fryer Method:

Cook in the Air Fryer at 390F for about 20 minutes. Turn and cook for additional 5 minutes to get the skin crispy on both sides.

Convection Oven Method:

Pre-Heat Oven to 425F. Put the Fish in a Cookie Sheet or Pyrex Pan and cook for 25 minutes. Turn the fish, and then Broil for about 5 minutes on top rack of the oven to get the other side crisp as well.

Green Beans In Brown Curry Sauce

  • ​Green Beans: 2 lbs

  • ​Roma Tomatoes: 2 medium-sized

  • ​Asafoetida: a pinch

  • ​Cumin Seeds: 1 tsp

  • ​Mustard Seeds: 1/2 tsp

  • Brown Curry Base: 2 tbsp

  • ​Salt: to taste

  • ​Cilantro: for garnishing

​Directions:

  • 1

    ​Chop about 2 lbs of green beans into desired thickness. Rough chop 2 Roma tomatoes.

  • 2

    ​In a large pan splutter a pinch of asafoetida and 1 tsp cumin and 1/2 tsp mustard seeds.

    Add 2 Tbsp Brown Curry Sauce, salt to taste, beans and tomatoes. Cook for about 10 minutes until beans cook through and all water is evaporated.

  • 4

    Garnish with chopped cilantro and serve with Weightloss Rotis, and a side of Protein, Salad and dollop of Greek yogurt.
