Iftar Prep – Beef Meatballs

Here is a healthy meal idea for Iftaar tomorrow night!

This is a great make ahead recipe and it will store well in your refrigerator for those busy weekdays when you are in a rush, so you can spend time praying and talking to your children instead of going crazy about what to cook for the Iftaar.

​For ​Making ​The ​Meatballs (koftas)

​Ingredients:

  • ​​​4lb Minced Beef**
  • ​2 tbsp ginger paste
  • ​2 tbsp garlic paste
  • ​1 tbsp garam masala powder
  • ​1 tbsp turmeric powder
  • ​1 tsp cayenne pepper
  • ​2 tbsp finely chopped green chillies
  • ​1 egg, salt to taste
  • ​​Black pepper to taste

(you could use minced goat/lamb/chicken as per your preference)

​Directions:

To prepare the koftas, first clean meat in cold running water and drain very well, so there is absolutely no water remaining.

Mix all the above ingredients and make the meat balls with hands.

(I have a large 10 cup food processor, so i just use that to mix everything.)

  • ​Tempering Spices - 2’’ cinnamon stick, 1 tsp caraway seeds, 2 bay leaf, pinch asafoetida.
  • ​1 lb onions (peel, wash and run thru food processor to get finest chop), 2 tbsp minced garlic, 2 tbsp grated ginger, 1/4 cup tomato paste.
  • ​1/2 tsp cayenne pepper , 1/2 tsp turmeric, 1 tsp garam masala, salt and pepper to taste.
  • ​(Optional) Almond Powder - 1/2 cup (i use spice grinder to make my own, but i guess u can use almond flour/meal as well).
  • ​Coconut cream - 1/2 cup.
  • ​Cilantro chopped finely - 1/2 cups.
  • ​Coconut Oil (or any oil of your choice) - 2 Tbsp.

    ​Heat oil on medium-high heat in a dutch oven or sauce pan.

    ​Add the Tempering Spices and cook for about 30 seconds taking care not to burn the spices.

    ​Add onion, garlic, ginger, tomato paste, cayenne pepper, turmeric, garam masala, salt and black pepper. Mix well and cook until the Sauce browns, should take 15-20 minutes on medium-high heat. (Sprinkle some water, while stirring if the sauce sticks to the pan.)

    ​Mix in the Almond Flour, if using and stir well.

    ​Add the meatballs and stir gently, taking care not to break the meatballs.

    ​Add water to get the desired consistency.

    ​Cook on medium high heat until the sauce boils and the meatballs cook thoroughly, about 20-30 minutes.

    ​Finish with heavy cream and cilantro.

    ​Eat with a side of steamed vegetables.
