Roasted Masala Cashews/ Almonds

Snacking often hinders our weight loss regime and the healthy snack suggestions are mostly bland and unpalatable.

I have this snack recipe in my treasure box which is amazingly tasty and does not threaten your weighing scale.

Ingredients:

  • Cashews or almond - 1 lb
  • **Chili flakes - 1 tsp
  • **Cayenne pepper - 1/2 tsp
  • Black pepper - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Coriander powder - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Lemon juice - 1 tsp
  • Olive oil - 1 tbsp
  • Sea salt - 1 tsp  (or to taste)
  • 1 beaten/frothed egg white  (you could skip this if you are vegetarian but I find that this helps bind all the spices very well to the nuts)

**Note: I like fiery hot spicy food hence I use both chili flakes and cayenne. You could use smoked paprika instead (or reduce the quantity of cayenne)

Directions:

  • 1
Toss everything in a bowl to combine together.
  • 2
Spread evenly in one layer on a cookie sheet.
  • 3
Start the oven to 350 F and put the tray in for about 25 minutes. You could take it out and check at 10 and 15 minutes mark (because each oven is slightly different)

(Note: I do not preheat the oven.)
