I tried it all - cauliflower rice, Cauliflower pizza to belong to the new social media and diet Industry trend. However the verdict around here is, no recipe can beat this Curried Cauliflower Recipe from the old times.
This Cauliflower recipe will get your cauliflower cooked without the unnecessary hassle and processing to make fake rice, drain water and all the hum drum. This is the most delicious and effortless creation you will ever make of this everyday vegetable. Ok rant over.
On to the Curried Cauliflower Recipe.
Ingredients and Cooking Method
If you have One Large Super sized Cauliflower, like the ones in the present day grocery stores, use only half. Unless you have a very large pan to cook this in. The idea is to use the quantity that fits in the pan without over crowding it. Cut Cauliflower into small florets about 2 inch in size.
Additionally you will need 1 large potato cut in one inch cubes. (Skip the potato if you are strict calorie counting). 1 large Tomato chopped in bite size pieces.
More Optional Ingredients - A cup of green peas, A cup of cut up Carrot (frozen is fine.),
2-3 Tbsp. Olive Oil. Some thai green chillies (or jalapenos) finely chopped (if you are into eating spicy and hot food). 1/2 tsp Turmeric. 1/2 tsp Paprika. (again optional, if you can tolerate the spice level). Salt to taste.
And now the Secret Sauce.
If you want to become a professional at making Curries; here is what you need to do. Go to your local grocery store and pick up a pre made Indian Curry sauce or order one online such as this one.
If you have time on hands, and really want to learn the basics, you can also prepare some over a weekend using this recipe for a Brown Curry Sauce. It totally makes your weekday cooking much easier. It also tastes 100% better than anything that comes from the jars in stores.
For this recipe, you will need about 1/2 a cup of Brown curry Sauce, whether you are using your own or the store bought one.
Lastly,
Totally Optional, but this is going to take your recipe to the next level. Use tempering spices - 1 tsp Cumin seeds, 1 tsp Mustard seeds, 1/4 tsp fenugreek seeds, a pinch of Asafetida powder.
And A cup of chopped Cilantro for garnish.
So here is how you cook this curried cauliflower:
In your largest pan, heat oil at medium high heat. Add the tempering spices (Cumin, Mustard, Fenugreek seeds and Asafetida powder).
Add the potatoes, tomatoes, brown curry sauce, salt, green chilly peppers and turmeric. Cook covered for about 3-4 minutes. All you are doing at this point is, getting potatoes a head start because they take slightly longer to cook.
Finally add all of the other ingredients except the cilantro. Simmer and cook covered for about 10 minutes. Turn off the heat and let rest another 5 minutes or so. Garnish with Cilantro.
