  • Ginger Grated: 2 Tbsp
  • Garlic minced: 1/4 cup
  • White or Yellow Onion finely chopped: 2 cup
  • Green Chillies or Jalapeno/ Serrano: 6-8 (or as per your heat tolerance; I use a lot :))
  • Cilantro: 1 large bunch
  • Olive Oil (or Coconut oil, Avocado Oil or Ghee/Butter): 2 Tbsp
  • Lemon or Lime: 1 large

Dry Ingredients:

  • Salt: to taste
  • Turmeric: 1/2 tsp
  • Coriander powder: 1 tsp

Directions:

  • 1
Heat oil in a large pan over medium-high heat.
  • 2
Add onion, garlic, and ginger and cook until golden brown.
  • 3
Now add all other ingredients (except cilantro and lemon) and cook for about 5 additional minutes as spinach wilts.
  • 4
Turn off the heat and let it cool for at least an hour.
  • 5
Once cooled down, transfer everything from the pan into your largest blender jar, add cilantro and make a thin paste.
  • 6
Squeeze the juice from the lemon and mix. Transfer into your meal prep containers.
