- 1Heat oil in a large pan over medium-high heat.
- 2Add onion, garlic, and ginger and cook until golden brown.
- 3Now add all other ingredients (except cilantro and lemon) and cook for about 5 additional minutes as spinach wilts.
- 4Turn off the heat and let it cool for at least an hour.
- 5Once cooled down, transfer everything from the pan into your largest blender jar, add cilantro and make a thin paste.
- 6Squeeze the juice from the lemon and mix. Transfer into your meal prep containers.
