Green Curry Base (For Various Recipes)


  • ​Spinach (I buy the large bag from Costco): 2.5 lbs
  • ​Ginger Grated: 2 Tbsp
  • ​Garlic minced: 1/4 cup
  • ​White or Yellow Onion finely chopped: 2 cup
  • ​Green Chillies or Jalapeno/ Serrano: 6-8 (or as per your heat tolerance; I use a lot :))
  • ​Cilantro: 1 large bunch
  • ​Olive Oil (or Coconut oil, Avocado Oil or Ghee/Butter): 2 Tbsp
  • ​Lemon or Lime: 1 large

​Dry Ingredients:

  • ​Salt: to taste
  • ​Turmeric: 1/2 tsp
  • ​Coriander powder: 1 tsp

    ​Heat oil in a large pan over medium-high heat.

    ​Add onion, garlic, and ginger and cook until golden brown.
  • 3
    ​Now add all other ingredients (except cilantro and lemon) and cook for about 5 additional minutes as spinach wilts.

    ​Turn off the heat and let it cool for at least an hour.

    ​Once cooled down, transfer everything from the pan into your largest blender jar, add cilantro and make a thin paste.

    ​Squeeze the juice from the lemon and mix. Transfer into your meal prep containers.
